Dark chocolate cherry bark with pistachios and flaky salt

With juicy cherries, rich chocolate and a hint of salt, this is the kind of treat that disappears quickly.

This chocolate cherry bark recipe looks like a challenge, but it’s ridiculously easy to make. Dark chocolate is melted and spread thin, then topped with fresh cherries, nuts and a pinch of salt. The flavours balance each other naturally, with bitterness from the chocolate, sweetness from the fruit and a bit of crunch in every bite. Recipe compliments of Juicy Delicious.

Ingredients

  • 300 g dark chocolate
  • 1 cup fresh cherries, pitted and halved, well drained
  • ½ cup pistachios or almonds, chopped
  • Pinch of flaky salt

Method

  1. Line a baking tray with baking paper.
  2. Melt the chocolate gently, either over a double boiler or in the microwave in short bursts.
  3. Pour the melted chocolate onto the lined tray and spread it out evenly.
  4. Scatter over the cherries and chopped nuts.
  5. Finish with a light pinch of flaky salt.
  6. Chill in the fridge until fully set.
  7. Break into irregular shards to serve.
