Tuna cheese toastie with miso, ginger, and spring onion

This toastie mixes miso, ginger, and spring onion with oily tuna and cheddar for a filling lunch or an easy weeknight dinner.

There is real joy in a good sandwich, especially at lunch when you want something quick that still feels like a treat. A toastie ticks every box because it is crisp on the outside, soft in the middle, and you get that moment where the cheese stretches and everything smells amazing. This one takes the classic tuna melt and gives it a proper flavour boost with white miso, ginger, and garlic. Recipe compliments of Woolworths.

Prep: 10 mins | Cook: 8 mins | Serves: Four

Ingredients

• 250 g jarred or canned tuna in oil
• 1 small garlic clove, finely minced or grated
• 1 tsp peeled and finely grated ginger
• 2 spring onions, finely chopped
• 4 tbsp white miso
• Unsalted butter, for the bread
• 8 slices sourdough, or your favourite bread
• 200 g cheddar, grated
• A little oil, for the griddle pan

Method

  1. Mix the tuna, garlic, ginger, spring onions, and miso in a bowl until well combined.
  2. Butter the bread on both sides.
  3. Spread the tuna mixture over one side of four bread slices.
  4. Layer the cheddar generously over the tuna.
  5. Top with the remaining buttered bread slices.
  6. Heat a griddle pan over medium-high heat and lightly oil it if you like.
  7. Cook each toastie for about 2 minutes per side, pressing down, until golden and the cheese is melted and dripping.
