HAUTE CUISINE at your fingertips with THERON`S BEEF RUSSIANS! Theron`s Beef Russians with Chocolate Port Reduction
Ingredients
▢1/2 tsp coarsely ground pepper
▢2 tsp fresh rosemary finely minced (Fresh from Mrs. T`s garden)
▢1/2 tsp mustard
▢1/4 tsp fresh garlic (crushed)
▢1/4 tsp salt
▢1kg Theron`s Beef Russians
▢1 tbsp extra virgin olive oil
▢3/4 cup decent quality port (Mrs.T prefers Allesverloren port.)
▢1/4 cup beef stock (Mrs.T uses Knorr beef stock cubes dissolved in hot water.)
▢1/2 tbsp aged balsamic vinegar (must be thick like syrup.)
▢20 g Organic 70% – 85% Dark Chocolate
▢1 tsp butter
▢Salt and pepper to taste.
▢Rosemary for garnish
▢Parsley for garnish
Instructions
In a small bowl, mix the pepper, fresh rosemary, mustard, fresh garlic, and salt together.
Heat the olive oil over medium heat in a medium non-stick saucepan. Add the mixed herbs and spices and sauté it lightly for the flavours to develop.
About 3 to 5 minutes, taking care that none of the ingredients overheat or burn. Add the port and beef stock while raising the heat to medium high.
Slice the Beef Russians diagonally to obtain a rectangular shape.
Cook the Russian slices for 5 minutes and remove from the sauce. Stir the left-over sauce often, making sure the sauce reduces to a light syrup without burning.
Remove from the heat and stir in the balsamic, the Organic chocolate, butter, salt, and pepper to taste.
Assembly
Arrange the Russian slices on serving plates. Drizzle with the port chocolate sauce and garnish with your choice of herbs or small edible flowers. I love using Rosemary sprouts with the purple flowers on, (when in season.)
