Durban North resident shares her boozy trifle recipe

Kate Machard shared her easy way to make a homemade trifle perfect for the festive season.

FINDING the perfect trifle recipe isn’t as easy as you might think.

If you google easy trifle recipes, you will find tons of content, however, with so many options, you are sometimes left rudderless in your journey to flavourful goodness.

Luckily, Northglen News spoke to Durban North resident and home cook, Kate Machard from Kate’s Kitchen, who shared her easy way to make a homemade trifle perfect for the festive season.

Machard said, in all, the trifle could be made in 20 minutes.

Ingredients

Swiss roll or queen cakes.
Sherry, rum or orange juice.
Custard powder or custard cream.
Fruits, eg, kiwis, strawberries and blueberries.
250ml cream.

She topped off her trifle using various fruits.

How to make the boozy trifle

1. Crumble queen cakes or Swiss roll into the bottom of a glass bowl to make a layer of approx 1/4 way up the bowl. (It’s always nice to see the layers.)
2. Add a good slug of brandy (or sherry if you prefer) to the crumbs – enough to soak the cake. If you want your trifle to be alcohol-free – you can use orange juice. Remember that the crumb will reduce, so be ready to crumble in a bit more if needed.
3. Add a few slices of your favourite fruit around the edge of the bowl. In my case, I used kiwi fruit, but you can use any fruit you like.
4. Arrange a can of drained peaches on top of your soaked crumbs. Again, you can use any canned fruit, such as fruit cocktail, cherries, pineapple, etc. I use the canned fruit at this stage because of the sweetness they have from the syrup that they sit in.
5. Make enough custard to fill your bowl until it is 3/4 full. Again, you can use Ultramel, but in this case, I made my custard using custard powder. You can make your own custard from scratch if you are feeling fancy.
It is important to make sure that the custard has set and is cold before moving on to the next step. You can also prepare the trifle up until this stage the day before.
6. Beat cream until stiff – enough to fill the bowl to the top. Arrange fresh-cut fruit slices of your liking on top. I used more kiwis, strawberries and blueberries. You can also shave a bit of chocolate on top if you prefer.
