What’s for dinner? Mince, green beans and potato curry
A really super simple curry that is budget-friendly and flavourful. Dinner is served in just under an hour.
Serves 4 – 6
You’ll need: 2 cups Harvestime Green Beans; 800g beef mince; 2 tablespoons oil; 2 fresh chillies; 2 onions diced; 2 tablespoons garlic and ginger; 3 tablespoons curry powder; 2 tablespoons tomato paste mixed with a little water; 2 large tomatoes, chopped; 3 large potatoes, diced; salt and pepper to taste; chopped coriander.
How to:
Heat oil in a large pot and fry the onions until translucent.
Add the chillies and garlic and ginger and cook for a minute before adding the curry powder, mix with the onions and be careful that the spices don’t burn.
Add the mince and allow fry for about 10 minutes.
Add the tomato/water mixture and the chopped tomatoes, followed by the green beans and potatoes.
Allow cooking until green beans and potatoes are done.
Adjust seasoning.
Garnish with freshly chopped coriander.
Serve with rice or pap.
