First Choice’s Black Forest ice cream cake

Everyone will love it.

Looking for something sweet and different to tickle your taste buds this weekend? Why not try to make First Choice’s luxury Black Forest ice cream cake?

CHERRY ICE CREAM:

*400ml chilled FIRST CHOICE Strawberry Velvet

*100g crushed cherries, pitted

*50g pitted cherries, halved

CHOCOLATE ICE CREAM:

*400ml chilled FIRST CHOICE Chocolate Velvet

*30ml cacao powder

*150g pitted cherries, halved or chopped roughly

CRUST:

*150g chocolate cookies, crushed

*50g FIRST CHOICE Butter, melted

TO DECORATE:

*Chocolate shards

*Fresh cherries

DIRECTIONS:

  1. Line a loaf pan very well with clingwrap or baking paper.
  2. Whip the strawberry velvet until thick and fold in the cherries. Spoon into the prepared loaf tin and freeze for 1 hour.
  3. Whip the chocolate velvet and cacao powder until thick and fold in the cherries. Spoon on top of the cherry ice-cream layer and freeze for until firm.
  4. Combine the crushed biscuits and melted butter and spoon on top of the frozen chocolate ice cream layer. Press down gently to make sure the crumbs will make a firm base.
  5. Freeze overnight.
  6. Unmould the ice-cream cake onto a serving platter.
  7. Garnish with lots of fresh cherries and chocolate shards.
