Sticky Toffee Pumpkin Fritters

This recipe, handed down many generations, is nostalgia on a plate and will become a family favourite in no time.

Ingredients:

Fritters:

  • 1 cup mashed pumpkin
  • 1 egg
  • 1/2 cup flour
  • 1/4 tsp baking powder
  • 1/2 tsp cinnamon
  • Oil for frying

Toffee Sauce:

  • 1/2 cup brown sugar
  • 1/4 cup butter
  • 1/2 cup cream

Instructions:

  • Mix fritter ingredients and fry spoonfuls until golden. Drain.
  • Melt toffee sauce ingredients and simmer until thick.
  • Pour over fritters while warm and serve with ice cream or custard.
