Braai a stuffed snoek fish this Heritage Day

Braai some stuffed snoek on Braai Day, 24 September, enough for everyone to enjoy while having a good time with family and friends.

Ingredients:

• 1 kg snoek fish

• Grated cheddar or mozzarella cheese (150-200g)

• 2 tablespoons of garlic and herb

• 2 sliced or diced red and white onions

• Melted garlic butter

• Steak and chops spice

• Garlic salt and black pepper

• Red, yellow and green peppers

• 1 or 2 mushrooms

• 2 tablespoon of lemon juice or 2 lemons

• Foil

How to prepare it:

• Wash all the vegetables you have diced and make sure they’re lined up neatly in a plate, and put them aside (along with the grated cheese).

• Wash and dry the snoek and trim away any visible fins.

• Cut the snoek (butterfly-like) in half (not the whole way to the other side) just enough to stuff your ingredients.

• With a small brush, brush the inside of the snoek with melted garlic butter.

• Season with some spices of your choice, along with some garlic salt and black pepper.

• Place the skin side of the snoek on top of a foil (enough to cover/wrap the fish) brush the lemon juice (squeeze the lemons) on both sides of fish.

• Stuff the vegetables in the fish (try placing them neatly).

• Close the snoek and wrap with foil to hold all the juices in, then put onto the braai.

• Braai for 20 minutes turning it once half way

• Remove foil after 20 minutes and braai another 15 – 20 minutes, turning the fish occasionally until golden brown.

• Use remaining lemon juice or lemons to apply on the snoek while braaing.

Now your ready, cut the fish in pieces/sizes you prefer, dish up for everyone, and enjoy with some refreshments.
