Recipe: Salmon and avocado salad

Try this simple recipe from The Diet Everyone Talks About, Eat Slim recipe book to make this delicious salmon and avocado salad with marinade sauce.


Ingredients

150g smoked salmon, cut into pieces
1  avocado, cut into cubes
1 medium onion, very thinly sliced
125g tomatoes, chopped/small, cherry type – halved
¼ cucumber, chopped (optional)

Marinade
15ml lemon juice
15ml vinegar
15ml canola/olive oil
1 clove garlic, crushed

To taste: Salt, freshly ground black pepper, mustard powder, fresh parsley, dill

Method

1. Mix all the salad ingredients.

2. Shake all the marinade ingredients thoroughly together.

3 Add the marinade mix to the salad.

4. Mix, cover and chill, not less than 1 hour before serving.
