Apart from his passion for molecular gastronomy and combining science and food, Pieter is an avid smoker, and has built his own dinosaur for just this purpose. The wine garden, which is sponsored by Nederburg, is the perfect place to while away the hours on a balmy Lowveld afternoon, a pulled-pork ciabatta, fresh from the smoker, accompanied by a chilled glass of your favourite tipple.

So, if a little food theatre is your thing, or you simply want a casual and relaxed afternoon in the Nederburg Heritage Wine Garden, Blue Print is the place to be. By the same token, anything that you can imagine at the restaurant can be yours for a function or party. Big or small, Pieter and his team will fulfil your wildest food fantasies, and then some.

Malan is not only a chef, but also a molecular gastronomy aficionado, using physics and chemistry to transform the tastes and textures of food. He is also a great fan of the cooking method of smoking, cooking anything and everything in this manner.

However, Blue Print does not only cater to the adventurous eater; the restaurant also offers fine dining and a casual wine garden.

As much as possible of the ingredients is locally grown and sourced and everything else is made from scratch, as the emphasises that exceptional quality takes time.

Blue Print was recently named the best bistro in the province, in the 2017 Eat Out Mercedes-Benz Best Everyday Eateries Awards. The winners were announced at a celebration in Johannesburg on October 24.

“The bottom line is the wow factor,” he told Lowveld Media recently. “We want at least three people to walk out of here saying wow. Then I’ll know that we are getting somewhere.”
