Indulge in peanut butter chocolate lava cakes

Plan ahead and have these oozing delights ready in under an hour! Dust with silver or gold frosting for an extra elegant touch!

Prep time: 10 minutes | Cook time: 8 minutes | Serves: 4

Ingredients

  • 200g dark chocolate, chopped
  • 105g unsalted butter, chopped
  • 2 eggs
  • 2 egg yolks
  • 1/2 cup castor sugar
  • 1/2 cup flour, sifted
  • 8 tablespoons smooth peanut butter
  • Cocoa powder for dusting
  • Ice cream for serving

Method

  1. Melt the chocolate and butter together over a double boiler or in your Instant Pot PRO. Cool slightly.
  2. In a large mixing bowl, use a hand beater to beat together the eggs, egg yolks and sugar until pale and creamy.
  3. Pour in the cooled melted chocolate mixture and fold until combined. Add the flour and stir well.
  4. Share two-thirds of the mixture evenly into 4 x 1 cup well-greased ramekins. Spoon 2 tablespoons peanut butter into the centre of each mould and cover with the remaining chocolate mixture.
  5. Add 1 1/2 cup cold water into the inner pot of  Instant Pot PRO. Place the trivet inside and place the ramekins on top. Choose Pressure Cook at High (Instant Pot) and cook for eight minutes. If you don’t have an Instant Pot, bake in the oven at 230 degrees celsius. We like our lava cakes extra gooey so we cook them for 10 minutes. The cake will be set on the outside but still have an indent and slight jiggle in the centre. For a firmer cake with a center that is still soft, bake for 12-13 minutes.
  6. Once they’re cool to touch, gently turn out the cakes, dust with cocoa powder and serve with ice cream.
