Enjoy a one-pot wonder packed with flavour

With a few fresh accompaniments, chilli con carne easily transforms from a winter warmer to a summer staple.

Chilli con carne may be a winter favourite, but it’s surprisingly versatile and can be a hit in summer too! Serve it up with lighter, fresh sides to give it a warm-weather twist. Try pairing it with a crisp salad, or spoon it over a bed of fluffy rice and top with fresh avocado, cherry tomatoes, and a sprinkle of lime juice. You could even use it as a filling for tacos or burritos, adding shredded lettuce and a dollop of cooling sour cream. Recipe compliments of Harvestime.

Prep Time: 5 minutes | Cooking time: 50 minutes | Serves: 4

Ingredients

  • 2 cups Harvestime Mix Veg
  • 1 tablespoon Oil
  • 500 grams beef mince
  • 2 cloves garlic crushed
  • 2 teaspoons chilli powder (add less if you prefer less heat)
  • 2 teaspoon mixed herbs
  • 1 tin chopped tomatoes – or 3 to 4 tomatoes chopped
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce

Method

  1. Heat oil in large pot on medium heat.
  2. Add the onions and cook until softened, then add the garlic.
  3. Add in the beef mince and simmer until water dries out.
  4. Add in the mixed herbs and chilli powder.
  5. Next add the tomatoes, tomato paste, a dash of water and the Worcestershire sauce.
  6. Allow to simmer for about 10 minutes before adding in the Harvestime mixed veg.
  7. Cook for 8 – 10 minutes until veggies have softened.
  8. Serve with pap or rice.
