Rooibos and honey poached pears served with berry lemonade

Rooibos tea, with its naturally sweet and fragrant qualities, lends a subtle depth to the pears, enhancing their flavour.

This rooibos and honey poached pears recipe is proof you don’t need a long list of ingredients or Jamie Oliver’s cooking skills to create something special. Infused with the earthy, aromatic flavours of rooibos tea, sweetened with honey, and kissed with hints of vanilla and cinnamon, this light dessert is the ideal treat after a week of indulgent New Year celebrations. Ingredients for the poached pears

  • Pears (peeled and halved)
  • Rooibos tea bags
  • Honey
  • Vanilla pod
  • Cinnamon stick
  • Water

Method

  1. In a large pot, bring water to a boil and add rooibos tea bags, honey, vanilla pod, and cinnamon stick.
  2. Reduce to a simmer and add peeled and halved pears.
  3. Simmer for 20-25 minutes until pears are tender.
  4. Remove pears and let the liquid reduce to a syrupy consistency.
  5. Serve poached pears drizzled with the rooibos and honey syrup.

Ingredients for sparkling berry lemonade

  • Fresh mixed berries
  • Lemon juice
  • Sparkling water
  • Mint leaves
  • Ice cubes

Method

  1. In a glass jug, muddle a handful of mixed berries with fresh mint leaves.
  2. Add lemon juice and a bit of sweetener if desired.
  3. Fill the jug with ice cubes.
  4. Top up with sparkling water.
  5. Stir gently and serve immediately.
