Creamy pineapple cocktail with vanilla vodka

This creamy, tropical cocktail comes together in minutes, and all you need are a handful of simple ingredients.

When it comes to cocktails, some flavour pairings never go out of style, and pineapple with coconut is one of them. The pineapple brings a tangy sweetness, while the coconut cream gives that rich, silky texture. Swap the usual rum for vodka and you get a smoother, creamier cocktail that’s more about the fruit and less about the booze burn.

Ingredients

  • 50 ml vanilla vodka
  • 100 ml fresh pineapple juice
  • 50 ml coconut cream
  • 10 ml lime juice
  • Ice cubes
  • Pineapple wedge and mint sprig, for garnish
  • A sprinkle of toasted coconut

Method

  1. Fill a cocktail shaker with ice.
  2. Add vodka, pineapple juice, coconut cream, and lime juice.
  3. Shake well until smooth and chilled.
  4. Strain into a tall glass filled with ice.
  5. Garnish with a wedge of pineapple and a mint sprig.

Tip: Add a drizzle of grenadine into the glass before pouring the cocktail. It will sink to the bottom, giving you a beautiful layered “sunset” effect.
