What’s for dinner? Chicken fried rice

Easy and better-than-takeout, this is the perfect, quick weeknight meal.

Serves 6-8

You’ll need: 500g Harvestime Country Mix; 2 cups rice, steamed; 600g chicken fillets, cubed; 5 tablespoons soy sauce; 2 teaspoons maizena; 2 teaspoons water; 1 tablespoon black pepper, crushed; 3 tablespoons oil; 1 large onion, sliced; 3 cloves garlic, crushed; 4 large eggs – optional; salt and pepper to taste.

How to: 

Cook the rice and keep it aside. Combine the soy sauce, maizena, water and black pepper and mix well – keep aside.

Add 2 tablespoons of the soy sauce liquid to the chicken and toss well.

Heat oil in a large frying pan on medium to high heat.

One hot, start frying the chicken in batches until browned – remove the chicken.

To the same pan, add more oil if needed and fry the onions until translucent.

Add the crushed garlic to the onions, followed by the Harvestime Country Mix.

Cook for 5- 8 minutes before adding the rest of the soy sauce liquid, combine well with the veggies.

Meanwhile, scramble 4 eggs and keep aside.

Now add the scrambled egg and rice to the veg mixture and gently toss until it is combined.

Adjust seasoning. Serve hot to the whole family.
