Smoky trout, naartjie, and chargrilled Tenderstem broccoli pasta
The smoky trout, zesty naartjie, and chargrilled Tenderstem broccoli combine beautifully for a refreshing, flavourful summer dish.
Forget your go-to mac and cheese or classic spaghetti bolognese – this pasta is here to shake things up! Smoky trout, zesty naartjie, and charred Tenderstem broccoli come together for a bold, unexpected fusion of flavours that’ll make ordinary pasta nights a thing of the past. Recipe compliments of chef Toerie van der Merwe from Njam Eatery.
Ingredients
- 100g pasta, of your choice
- 80g smoked trout, diced into 3 cm squares
- 4-5 Tenderstem broccoli, cut in half
- 20g white onion, thinly slice
- 10g fennel bulb, thinly sliced
- 75ml white wine
- 150g cream
- 5 leaves fresh basil, thinly sliced
- 1 tsp naartjie zest
- 20g parmesan, shaved
- Salt & pepper, to taste
Method
- Bring water for pasta to boil.
- Grill the Tenderstem broccoli in a charcoal oven, or on a braai, until al dente. (Otherwise fry in a pan with some oil till al dente).
- Fry the onion till soft, then add the fennel and fry till soft.
- Add the wine, reduce.
- Add cream, reduce
- When the cream gets thicker, remove from the stove
- Add salt and pepper to taste
- Drop pasta in water and cook till al dente, approx. 8 minutes, then drain.
- Add pasta to cream sauce, then add diced trout and Tenderstem broccoli to the cream sauce.
- Heat up slightly, but do not overcook the trout.
- Serve in a pasta bowl.
- Garnish with naartjie zest, basil and shaved parmesan cheese.
