The warming charm of winter Pimm’s punch

This cocktail is quick to make, serves two, and works well as a pre-dinner drink or something to sip on while curled up under a blanket.

Pimm’s might be the poster drink for sunny afternoons and garden parties, but it turns out it also holds its own when the weather turns cold. With the right ingredients, that familiar fruitiness transforms into something richer, spicier, and perfect for winter evenings.

 

Ingredients

  • 100ml Pimm’s No 1 
  • 50ml brandy
  • 300ml apple juice
  • 1 cinnamon stick
  • 2 thin slices of fresh lemon (for garnish)
  • Optional: 1–2 star anise or a whole clove
  • Optional: dried mint or dried lemon balm

Method

  1. Pour the Pimm’s, brandy, and apple juice into a small saucepan.
  2. Add the cinnamon stick, and if using, the star anise or clove.
  3. Warm gently over low heat for about 10 minutes (don’t let it boil).
  4. Remove from the heat and let the drink sit for a minute before pouring.
  5. Strain into heatproof glass mugs (or leave the dried mint or lemon balm settled at the bottom for a rustic touch).
  6. Garnish each with a thin slice of lemon.
