Grilled veggies with melting aubergines recipe

This dish brings together smoky grilled aubergine, roast vegetables, and a fresh sprinkle of basil and pistachios.

Are you looking for a simple way to turn mixed veggies into something a little more special? This warm aubergine and roast veggie platter is perfect as a side dish, lunch, or a meat-free main. With just a few fresh ingredients and a handful of pantry staples, it comes together in half an hour. Recipe compliments of McCain.

Ingredients

  • 1 packet – McCain Roast Veg Classic
  • Olive oil
  • 2 large Aubergines sliced very thinly lengthwise – use a mandoline slicer with caution if you have one
  • 2 tablespoons chopped pistachios
  • Fresh basil
  • Salt and pepper

Method

  1. Roast the McCain veg at 180 Degrees Celsius according to package instructions and set aside.
  2. Brush the sliced aubergines with olive oil and season.
  3. Grill the aubergines on a grill pan on medium to high heat until softened and char marks are seen.

To assemble

  1. Arrange the aubergine on a large platter, top with the roast veg.
  2. Season and sprinkle the chopped pistachios, olive oil and fresh basil.
