Grilled veggies with melting aubergines recipe
This dish brings together smoky grilled aubergine, roast vegetables, and a fresh sprinkle of basil and pistachios.

Ingredients
- 1 packet – McCain Roast Veg Classic
- Olive oil
- 2 large Aubergines sliced very thinly lengthwise – use a mandoline slicer with caution if you have one
- 2 tablespoons chopped pistachios
- Fresh basil
- Salt and pepper
Method
- Roast the McCain veg at 180 Degrees Celsius according to package instructions and set aside.
- Brush the sliced aubergines with olive oil and season.
- Grill the aubergines on a grill pan on medium to high heat until softened and char marks are seen.
To assemble
- Arrange the aubergine on a large platter, top with the roast veg.
- Season and sprinkle the chopped pistachios, olive oil and fresh basil.
