Sink your teeth into these sticky BBQ cocktail ribs

These cocktail ribs are tender, saucy, and finished with toasted sorghum, cumin, and curry leaves for the ultimate finger food.

With Eskort BBQ Cocktail Ribs on the table, things are about to get finger-lickin’ fantastic. Smoky, sweet, and just the right amount of saucy, they’re made for sharing (but we won’t judge if you don’t).

Prep time: 10 – 15 mins | Cook time: 25 mins | Total time: 40 mins | Serves: 4 – 6

Ingredients

  • 2Tbsp Avocado oil
  • ¼ cup sorghum
  • 1tsp cumin seeds
  • 1 stalk fresh curry leaves
  • Fine salt

 

Method

  1. Cook ribs according to the instructions.
  2. In a wide pot with a lid, add enough avocado oil to coat the base of the pan in a moderate slick of oil.
  3. When the oil is hot to the palm, throw in the cumin seeds, curry leaves, followed by the sorghum.
  4. Allow to pop before tossing through with some fine salt.
  5. Pour the sorghum popcorn into a pestle and mortar and grind roughly into even-sized pieces before dipping each rib into the sorghum.
