Two-layered boozy strawberry jelly with vodka and prosecco

Sweet, refreshing, and just a little indulgent, this strawberry jelly with a splash of alcohol is perfect for sharing with friends.

Jelly isn’t just for kids’ parties. Add a splash of your favourite spirit and you’ve got a playful grown-up dessert. The beauty of this recipe is its flexibility. You can make one version with alcohol for adults and a second, child-friendly option.

Ingredients

  • Handful fresh strawberries
  • 1 pack strawberry jelly
  • 1 pack orange jelly
  • 400 ml boiling water (200 ml for each packet)
  • 150 ml vodka (for the red strawberry layer)
  • 150 ml prosecco or orange liqueur (for the orange layer)

Method

  1. Dissolve the strawberry jelly in 200 ml boiling water. Allow to cool slightly, then stir in the vodka. Pour into a mould or dish and refrigerate until set.
  2. Once the red layer is firm, dissolve the orange jelly in 200 ml boiling water. Let it cool a little, then stir in prosecco or orange liqueur.
  3. Carefully pour the orange jelly over the red layer. Refrigerate again until both layers are fully set.
  4. Pour into moulds or a large dish and refrigerate for at least 4 hours, or until set.
  5. Serve topped with fresh strawberries and a drizzle of strawberry syrup.

Tip: For a child-free option, follow the same steps as above, but replace the alcohol with apple or grape juice. Add fruit between layers for extra fun.
