Peppered roast beef with herb and olive salsa
A well-balanced rub helps create that flavourful crust on the outside, while the inside stays soft and juicy.
A good spice rub is one of the simplest ways to build flavour in meat, especially with a cut like beef fillet. This recipe, compliments of Woolworths TASTE, pairs a bold, peppered crust with a fresh olive salsa.

Ingredients
- 1 sliced peppered roast beef with onion and mustard gravy
- Dijon mustard, for serving (optional)
For the salsa:
- 2 tablespoons fresh dill, roughly chopped
- 2 tablespoons fresh parsley, roughly chopped
- 2 tablespoons capers, roughly chopped
- 1 tablespoon green olives, roughly chopped
- 1 tablespoon black olives, roughly
- 1 tablespoon extra virgin olive oil
- Sea salt, to taste
Method
- Prepare the roast beef according to package instructions and warm gently.
- In a small bowl, combine the dill, parsley, capers, olives and olive oil. Season lightly with salt.
- Arrange the sliced beef on a platter and spoon the salsa over just before serving.
- Serve with Dijon mustard on the side, if using.
