Peppered roast beef with herb and olive salsa

A well-balanced rub helps create that flavourful crust on the outside, while the inside stays soft and juicy.

A good spice rub is one of the simplest ways to build flavour in meat, especially with a cut like beef fillet. This recipe, compliments of Woolworths TASTE, pairs a bold, peppered crust with a fresh olive salsa.

Prep time: 10 minutes | Cook time: 25 minutes | Serves: 4 to 6 | Difficulty: Easy

Ingredients

  • 1 sliced peppered roast beef with onion and mustard gravy
  • Dijon mustard, for serving (optional)

For the salsa:

  • 2 tablespoons fresh dill, roughly chopped
  • 2 tablespoons fresh parsley, roughly chopped
  • 2 tablespoons capers, roughly chopped
  • 1 tablespoon green olives, roughly chopped
  • 1 tablespoon black olives, roughly
  • 1 tablespoon extra virgin olive oil
  • Sea salt, to taste

Method

  1. Prepare the roast beef according to package instructions and warm gently.
  2. In a small bowl, combine the dill, parsley, capers, olives and olive oil. Season lightly with salt.
  3. Arrange the sliced beef on a platter and spoon the salsa over just before serving.
  4. Serve with Dijon mustard on the side, if using.
