Sweet and tangy nectarine harissa salmon with fresh herb salsa
This pan-seared salmon with sweet nectarine, harissa sauce and fresh herb salsa is an easy dinner for any night of the week.
Salmon is not only delicious, but it’s healthy too. It’s high in protein, so it keeps you full, and its omega-3 fats are good for your heart and brain. It also gives you vitamin D, which your body needs for strong bones, and B vitamins that help with energy levels. There are plenty of ways to cook salmon, but pan searing gives you crisp skin, tender flesh and a lovely golden finish. This recipe is easy to play around with. Swap the nectarines for peaches, add a squeeze of lemon, or throw in a few chopped chillies. Recipe compliments of Juicy Delicious.

Ingredients
For the nectarine herb salsa:
- 150 g fresh nectarines, diced
- 15 g mint leaves, finely chopped
- 15 g parsley, finely chopped
- 15 g coriander, finely chopped
- 2 spring onions, finely sliced
- 30 ml white wine vinegar
- 10 ml olive oil
- Salt to taste
For the salmon:
- 4 salmon fillets, skin on
- 15 ml olive oil
- Salt
Method
- For the salsa, combine nectarines, herbs and spring onion. Add vinegar, olive oil and salt. Mix gently and set aside.
- Heat olive oil in a pan over medium-high heat.
- Season the salmon with salt and place skin-side down. Cook until the skin is crisp and most of the flesh has cooked through.
- Turn briefly and cook the flesh side for 1 minute. Rest before serving.
- Spoon warm nectarine sauce onto plates, top with salmon and finish with fresh salsa.
