La Lucia launch reveals how rising costs are reshaping menus

Unilever Food Solutions unveiled its Future Menus 2026 report at Unilever in La Lucia highlighting key trends.

RISING costs, tighter margins and increasingly discerning diners are shaping the future of professional kitchens in 2026. These were among the top four key trends shared at the launch of Unilever Food Solutions’ latest Future Menus report, which took place in La Lucia last Thursday.

Drawing on data from millions of online searches, insights from more than 250 chefs across 75 countries, and real consumer behaviour, the report provides a detailed look at the trends set to influence menus in the year ahead.

“Last year’s Future Menus report showed diners responding to gourmet ingredients and the theatre of elevated eating. This year, the focus has shifted to honest storytelling, quality ingredients and value for money in every bite,” said Yonela Motloung, Marketing Director for Unilever Food Solutions South Africa.

At its core, the report highlights how foodservice in 2026 is about making smarter choices, creating food with meaning and delivering dishes that feel worth every cent.

The report identifies four key trends shaping global foodservice in 2026:

• Culinary roots: A growing focus on heritage, where indigenous ingredients, traditional techniques and ancestral recipes are reimagined for modern diners. The trend celebrates authenticity, local sourcing and food that tells a story of place and identity.

• Street food couture: A movement towards accessible yet premium-inspired food rooted in street culture, where craft, technique and regional pride take centre stage. Bold flavours, smaller portions and dishes that feel both indulgent and authentic define the trend.

• Borderless cuisine: A more thoughtful approach to blending global cuisines, where chefs draw inspiration from different cultures with greater understanding, respect and intention.

• Diner designed: A refined take on personalisation, where diners still enjoy choice without unnecessary complexity. Simpler menus, modular builds and flexible formats allow for customisation while maintaining kitchen efficiency.
