#WFD – Cheese and Bacon Potato Wedges with Guacamole

What’s for Dinner says by following this easy supper recipe for Cheese and Bacon Potato Wedges with Guacamole, you can enjoy a delicious treat in just one hour.

Ingredients

  1. 700g potatoes, peeled and cut into wedges
  2. 50ml olive oil
  3. 1 x KNORR Cheese and Bacon Flavour Potato Bake
  4. 3 ripe avocados
  5. 10ml lemon juice
  6. 1 small red onion, finely chopped
  7. 1 red chilli, finely chopped (seeded)
  8. 15ml fresh coriander, finely chopped
  9. 45ml sour cream
  10. salt and black pepper (to taste)

Method

  1. Preheat oven to 180°C.
  2. Place potato wedges in a suitable roasting dish and sprinkle dry sachet contents over the potato wedges.
  3. Drizzle with olive oil and bake for 30-40 min until golden brown and crispy.
  4. Place avocado flesh into a bowl and mash lightly with a fork together with the lemon juice.
  5. Add onion, chilli, coriander and sour cream and season with salt and pepper.
  6. Serve chilled as a dip for the crispy potato wedges.
