31 Days of Christmas: Creamy avocado and prawn cocktail recipe

The dish consists of shelled, cooked prawns in a Marie Rose sauce or cocktail sauce. It was the most popular appetiser in Great Britain and the United States from the 1960s to the late 1980s.

Ingredients for prawn cocktail recipe:

  • 1 avocado, halved, stone removed, peeled, coarsely chopped
  • 1 Lebanese cucumber, or a small English cucumber, finely chopped
  • 1/2 small red onion, finely chopped
  • 125g (1/2 cup) mayonnaise
  • 1 tbsp tomato sauce
  • 2 tsp worcestershire sauce
  • 1 tbsp fresh lemon juice
  • 6 drops red Tabasco pepper sauce
  • 8 iceberg lettuce leaves
  • 24 (about 2kg) cooked large king prawns, peeled leaving tails intact
  • Lemon wedges, to serve

Method:

  1. Combine the avocado, cucumber and onion in a medium bowl.
  2. Whisk together the mayonnaise, tomato sauce, Worcestershire sauce, lemon juice and Tabasco in a bowl.
  3. Line each serving glass with 1 lettuce leaf. Finely shred the remaining lettuce leaves and divide among the glasses. T

  5. Drizzle over the mayonnaise mixture.
  6. Serve with lemon wedges.
