Recipe: Sour cherry gin fizz

We've added a little bit of colour to the classic gin fizz to create a summer cocktail.

Ingredients

¼ cup sour cherries, fresh or frozen (thawed)
1 tsp superfine sugar
90ml Bombay London dry gin
2 tbsp tart cherry juice
1 tbsp lemon juice
1 large egg white
4-5 ice cubes, plus more for serving
4 tbsp club soda
Fresh blueberries for serving

Method

1. Muddle cherries and sugar in a cocktail shaker or mason jar with a tight-fitting lid.

2. Add gin, cherry juice, lemon juice, egg white and ice.

3. Cover and shake for 30 seconds.

4. Strain into two glasses filled with ice.

5. Top each drink with two tablespoons club soda.

6. Spoon some of the cherries from the shaker into the glasses.

7. Skewer blueberries, if using, onto two toothpicks to garnish the drinks.
