With the unpredictability of colder days here in the Lowveld, a pancake challenge has got you covered for that tasty treat on a cool day.
Chef Cindy Coetzee, a mother to a son with autism and the founder of the Indigo Smiles Autism Foundation (ISAF), is aiming to bake 15 000 pancakes in 30 days to raise awareness for autism and also to raise funds for the ISAF.
ISAF is a non-profit organisation that aims to assist families with children on the spectrum.
Coetzee’s pancake station is currently situated at Cartime in Riverside.
“They have opened a spot for me to do the challenge to be able to get my tools needed for my autism research and nutritional assistance to special needs families. Nutrition is our building block and has a huge impact on the body.

“Through this challenge, my aim is to reach more parents who might need assistance or resources to assist their child in the Lowveld and reach companies who would like to get involved.
“I have connected with over 150 families as a mum, and the majority of these kids all need therapies and treatments on different levels. We also need safe havens and life skill development.”
Few people need a reason to buy a pancake, but this challenge and fundraiser serves as one. The challenge ends on September 23.
