White River mother’s pancake challenge for a good cause almost done

A chef and mother from White River is reaching the end of her pancake challenge, all in the name of raising funds and awareness for an important cause - autism awareness.

A mother on a mission, Chef Cindy Coetzee, is still working towards her goal of baking 15 000 pancakes in 30 days, with the help of the Lowveld community.

Coetzee, a mother to a son with autism and the founder of the Indigo Smiles Autism Foundation (ISAF), took on the challenge in an effort to raise awareness for autism and to raise funds for the foundation.

ISAF is a non-profit organisation that aims to assist families with children on the spectrum. Coetzee’s pancake station is at Cartime in Riverside.

The end of Coetzee’s challenge was to be last Saturday September 23, but it has been extended to September 30.

“I have baked 3 731 pancakes so far. I don’t bake when there are no orders as I don’t want to waste ingredients. Having orders will ensure I achieve this target,” she said.

Coetzee said she will happily bake and deliver pancakes to schools, old age homes, and any businesses that want to support the foundation. To order pancakes from Coetzee or find out more about the ISAF, email her on chefcindy08@gmail.com.
