Recipe of the day: 20-minute creamy tomato and bacon pasta recipe

This 5-ingredient pasta dish will become one of your favourite meals to prepare, and to eat!

Rainy evenings call for carbs and red wine, and this creamy tomato and bacon pasta recipe will be ready in 20-minutes, giving you plenty of time to catch up on your favourite Netflix shows.

Probably the best part of this recipe is that you can use the ingredients already in your grocery cupboard. If you don’t have a specific ingredient, it can easily be substituted with something else, saving you a trip to the shop.

Method

  1. Chop and fry two onions in 3 tablespoons olive oil or butter until soft and translucent.
  2. In the meantime, get 4 cups of pasta on the boil (you can use any pasta).
  3. Once the onions are done, remove from the pan and set aside.
  4. Add 2 packs of bacon to the pan and fry them as you like your bacon done, crispy or soft. Once done, chop into little pieces. Add the onion back to the pan.
  5. Now add in the two tins of tomato paste to the bacon and onion mix and simmer for 2-3 minutes, deglazing the pan with a tablespoon or so of red wine or water.
  6. Once those flavours have developed, add 2 cups of cream (or milk) and mix through until well combined.
  7. Drain the pasta once cooked and add to the pan, mix and coat pasta with the sauce.
  8. Sprinkle with fresh Basil leaves for a dash of colour and an extra flash of flavour (optional).
  9. Serve just as is or with a crisp green salad.
