This delicious noodle dish will satisfy any Monday craving!

You can substitute the crab with any fresh or frozen seafood.

Ingredients

Scale
  • 200g medium egg noodles
  • 1tbsp vegetable oil
  • 400g frozen mixed vegetables
  • 6tbsp sweet chilli sauce
  • 1tbsp soy sauce
  • ½tbsp cornflour
  • 100ml chicken or vegetable stock
  • 170g tinned crab, drained
  • Frozen or chopped fresh coriander leaves, optional

Instructions

  1.             Bring a pan of water to the boil; cook noodles following pack instructions. Drain well; set aside.

  2.           Heat oil in a large wok until smoking. Add veg and stir-fry for 5min until piping hot.

  3.     I   In a small bowl, stir together the sweet chilli sauce, soy, cornflour and stock. Add sauce to the wok; bubble for 1min, then toss through noodles, crab and coriander (if using). Check the seasoning; serve immediately.
