Recipe of the day: Tasty and spicy jalapeno poppers

These jalapeno poppers with the lime cilantro dip are the perfect snack and treat to serve at your lunch or dinner parties.

Tasty and spicy jalapeno poppers

Ingredients

  • 350ml of cream cheese, softened
  • 1 packet of shredded cheddar cheese
  • 1 tablespoon of bacon bits
  • 350ml of jalapeno peppers, seeded and halved
  • 1 cup of milk
  • 1 cup of all-purpose flour
  • 1 cup of dry bread crumbs
  • 2 quarts of oil for frying

Instructions

  1. In a medium bowl, mix the cream cheese, cheddar cheese and bacon bits. Spoon this mixture into the jalapeno pepper halves.
  2. Put the milk and flour into two separate small bowls. Dip the stuffed jalapenos first into the milk then into the flour, making sure they are well coated with each. Allow the coated jalapenos to dry for about 10 minutes.
  3. Dip the jalapenos in milk again and roll them through the breadcrumbs. Allow them to dry, then repeat to ensure the entire surface of the jalapeno is coated.
  4. In a medium skillet, heat the oil to 180 degrees C. Deep fry the coated jalapenos 2 to 3 minutes each, until golden brown. Remove and let drain on a paper towel.

Lime cilantro dip

Ingredients

  • 1 cup of mayonnaise
  • 1 cup of sour cream 
  • 1 cup of chopped cilantro 
  • 4-5 tablespoons of lime juice
  • ½ teaspoon of salt
  • 1 teaspoon of minced garlic (optional)

Instructions

  1. Combine all ingredients in a medium bowl.
  2. Cover and refrigerate for at least 2 hours, to allow all the flavours to combine.
  3. Serve as a dip for your jalapeno poppers or with chips or bread, or use as a topping on fish, chicken, or hamburgers.
