Recipe: Biltong salad

Put a flavourful South African spin on your bed of greens.


Try this delicious biltong salad recipe from Matthew Foxon, the executive chef of the five star 54 on Bath hotel in Rosebank, Johannesburg.

Ingredients

Slices of biltong, cut as thin or thick as you want
100g washed bean sprouts
¼ cup marinated sun-dried tomatoes
2 discs of feta
2 baby gem lettuce, washed and roughly cut
¼ cucumber, diced
10 cherry tomatoes, halved
1 bell pepper, thinly sliced
2 spring onions, thinly sliced

Method

1. In a large bowl add the gem lettuce, cucumber, tomato, spring onions and peppers.

2. Place the sun-dried tomato around the top, followed by the biltong.

3) Finish by sprinkling bean sprouts over the salad and some crumbled feta.
