For breakfast blues: French toast three ways

French toast is a dedicated treat and fantastic for the weekend to make or if you are looking for a dessert recipe.


Whipping something delicious and sweet for breakfast has been made a bit easier with these French toast recipes to kick-start your weekend or day.

French toast is a popular breakfast dish consisting of sliced bread soaked in beaten eggs add with usually milk or cream, and then pan-fried.

It’s a dedicated treat and fantastic for the weekend to make or if you looking for a dessert recipe.

French toast three ways

Thai tea Hong Kong French toast

Ingredients 

  • 1 cup of Thai tea
  • 3-4 slices of white bread
  • 1/2 cup of sweetened condensed milk
  • powder sugar
  • 1/2 tsp star anise extract
  • pinch of salt
  • 2 tsp ground cardamom
  • 1/4 cup of sugar
  • vegetable oil
  • 2 eggs

Method

  1. Spread 1 tablespoon of sweetened condensed milk on each side of the bread well. 
  2. Stack slices of bread on top of each other. Cut off crusts. In a bowl, whisk eggs, Thai tea, star anise and a pinch of salt until well combined. Set aside.
  3. Add oil to a deep pot and heat to 375°F (190°C). 
  4. Fry each side for two minutes, rotating frequently. Once crisp, remove from the oil and place on the drying rack. 
  5. As it slightly cools, mix sugar and cardamom in a bowl. 
  6. Place toast in bowl and coat all sides in cardamom sugar. Brûlée (toast the sugar on top) if desired then drizzle with sweetened condensed milk and dust with powdered sugar.

Eggnog Hawaiian roll French toast

Ingredients

  • 1 or 2 packages of Sweet Hawaiian Rolls (12 to 24 rolls)
  • 3/4 cup eggnog
  • 2 large eggs
  • 1 tablespoon light brown sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • pinch of nutmeg
  • 1/4 cup unsalted butter
  • powdered sugar
  • maple syrup
  • whipped cream, optional

Method:

  1. To a bowl, make the custard for dipping the bread in. Combine eggnog, eggs, brown sugar, vanilla extract, nutmeg and cinnamon. Whisk really well until completely smooth and homogenous.
  2. Heat a large pan over medium-low to medium heat. Add a little bit of butter. If the pan is too hot, the butter will burn so make sure it’s not too high.
  3. Dip each Hawaiian Roll in the custard quickly and place on the pan. Repeat with a few more until the pan is full but not crowded.
  4. Cook for about 2 minutes, then turn each one over and repeat so every side of the roll gets golden brown and crispy. Take off the pan and repeat with the rest of the Hawaiian Rolls.
  5. Sprinkle with powdered sugar and drizzle maple syrup on top. Optional, serve with berries and whipped cream to enjoy!

French toast sticks

Ingredients

For the egg mixture:

  • 2 large eggs
  • ½ cup powdered sugar
  • ¼ cup milk
  • 2 tablespoons maple syrup
  • ¼ teaspoon ground cinnamon
  • 6 slices white bread, cut into thirds
  • Nonstick spray

For the cinnamon sugar:

  • ½ cup white granulated sugar
  • ¼ teaspoon ground cinnamon

Instructions

  1. In a medium-sized bowl, whisk together eggs, milk, powdered sugar, maple syrup, and ¼ tsp ground cinnamon.
  2. Cut each slice of bread into thirds and dip them into the egg mixture.
  3. In a small plate mix ½ cup granulated sugar with 1/4 tsp ground cinnamon until well combined. Heat a large skillet and coat it with cooking spray.
  4. Once hot, brown the sticks on all sides. Remove them from the skillet and immediately roll them in the cinnamon sugar until all sides are covered with it.
